Non-fat Greek yogurt works. Buttermilk also works instead of yogurt. I am not sure who convinced the world that muffins are breakfast food but muffins are cupcakes in disguise.

    Food Stuffs
  • 2 cups all purpose flour
  • 3/4 cup cocoa powder
  • 1 tlbs baking powder
  • 1/2 tsp baking soda
  • 1-1/2 cup chocolate chunks
  • 1-1/2 cups white sugar
  • 2 eggs
  • 8 tlbs butter
  • 1 cup yogurt
    Seasonings
  • 1/2 tsp salt
  • 1 tlbs vanilla extract

    Steps for Completion
  1. Preheat the oven to 350°F.
  2. Sift together the flour, cocoa powder, baking powder, baking soda, and salt. Mix in the chocolate chunks into the dry ingredients. The flour coating should prevent them from sinking to the bottom of the pan during baking.
  3. Whisk together the sugar, butter, eggs, yogurt, and vanilla.
  4. Add the wet ingredients to the dry and mix until still lumpy. Do not overmix. You will still see some flour unmixed.
  5. Put the muffins in the oven and increase the temperature to 400°F. Bake for 20 minutes or until a knife comes out clean.
